Mom's Homemade Granola
I’ve been eating this exact granola since I was 5 years old. My Mom poured it in my little Strawberry Shortcake bowl, topped it with raisins and cold milk, and I enjoyed every bite!
I usually only make and enjoy it during Christmas because I give it as gifts at our big extended family get-togethers. Below is the recipe as a full batch which makes one baking pan full.
MOM’S HOMEMADE GRANOLA
DRY INGREDIENTS:
4 1/2 cups oats
1 cup wheat germ
1/2 cup brown sugar
7oz. coconut flakes
1 cup sliced almonds
1/2 tbsp salt
2 tsp cinnamon
2 tsp nutmeg
Lightly combine all dry ingredients in an extra large bowl.
WET INGREDIENTS:
1/3 cup water
3/4 cup melted coconut oil
2 tsp vanilla
Whisk all wet ingredients in a glass measuring cup.
Pour wet mixture into bowl with dry ingredients. Mix with a pasta spoon (or a spoon with teeth) until everything is well coated. Mix together with your hands, squeezing slightly to create small clumps among the loose granola mixture.
BAKE SLOW AND LOW:
Pour into a metal baking dish (or 2 if making a double batch). Bake at 250 degrees for a few hours or until granola become dry and golden. Stir corners into center about every hour. If baking on two racks, switch them each time you take the pans out to stir.
Serve with raisins and cold milk. Or add it to your yogurt! It’s soooo delicious and your house will smell amazing!
